Who said we can't enjoy eating healthy foods? If you are looking for healthy food to cook in 30 minutes, you might want to try this easy and delicious quinoa salad.
Quinoa is a high-protein grain that is gluten-free and rich in fiber, iron, and antioxidants. My friends think it has a "nutty flavor" and a fluffy texture that makes it perfect for salads. I don't consider it a salad, but more like rice.
To make this quinoa, you will need the following ingredients:
- 1 cup of quinoa
- 2 cups of water
- 1/4 cup of chopped fresh parsley
- 2 tablespoons of lemon juice
- 2 tablespoons of olive oil
- Salt and pepper to taste
- 1/4 cup of sliced almonds (optional)
Follow these steps to prepare the quinoa:
1. Rinse the quinoa under cold water and drain well.
2. In a medium saucepan, bring the water and a pinch of salt to a boil. Add the quinoa and reduce the heat to low. Cover and simmer for 15 to 20 minutes, or until the quinoa is tender and fluffy.
3. Fluff the quinoa with a fork and transfer it to a large bowl. Let it cool slightly.
4. Add the parsley, lemon juice, olive oil, salt, pepper, and almonds to the quinoa. Combine the mixture.
5. Enjoy! You can store it in an airtight container in the refrigerator for up to 3 days.
This recipe is incredibly versatile and can easily be adapted to suit your taste. I love adding almonds and dried cranberries for a little extra crunch and sweetness, but feel free to swap in your favorite fruits, vegetables, nuts, seeds, or cheeses for a unique twist.
